Ahi Tuna & Black Truffle Tartare

  • Sushi-grade Ahi Tuna
  • 1 egg yolk
  • Black truffle shreds or pieces to taste
  • Chives, chopped
  • Parsley, minced
  • 1 tbsp mayonnaise
  • White pepper, to taste
  • Salt or truffle salt, to taste
  • Ground thyme, to taste
  • Brioche bread or crostini


Cube the cleaned tuna.

Toss fish with egg yolk, black truffle, chives, parsley, and mayonnaise.  

Add white pepper, salt or truffle salt, and ground thyme to taste.  

Toast Brioche bread in a broiler, serve with tuna, or as tuna crostini immediately—or serve plated with an assortment of vegetables. Either way, enjoy!
