Hilary’s Chopped Chickpea Salad

This is my go to comfort food when the weather starts to get warmer.  Quick to assemble and highlighting fresh ingredients.  


  • 2 Tbsp fine olive oil
  • 2 Tbsp red wine vinegar
  • 2 garlic cloves chopped
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 can (15oz) chickpeas drained and rinsed
  • 1 cup diced cucumber
  • 1 cup quartered grape or cherry tomatoes
  • 1/3 cup chopped parsley
  • 1/4 cup finely chopped red onion
  • 1/4 cup halved Kalamata olives
  • 1/4 cup crumbled feta


Prior to cooking, pour yourself a glass of the 2020 Hallberg Ranch.

Whisk all dressing ingredients in a bowl  – olive oil, red wine vinegar, garlic, salt and pepper.

Add the salad ingredients and mix thoroughly.

Serve with pita, hummus and tzatziki.
