Every good taco (or burrito, or huevos rancheros, or tortilla chip, or…) deserves great toppings. This green salsa recipe is authentic, tried, and true—and a little spicy! Enjoy it with some of our favorite wines to sip on in warmer months, lightly chilled.

Pairing recommended by both our Coordinator of Awesome Marisa Avila and Director of Magic Jessie Johnson.

  • 6 medium tomatillos
  • 4 jalapeno peppers, fresh
  • ½ to 1 cup water
  • 1 garlic clove
  • ¾ cup cilantro
  • Salt to taste

1. In a pan or in your oven, char the tomatillos, garlic, and jalapenos.

2. Once the items have a nice char on them, place them in blender, along with ½ the water, cilantro, and salt.

3. If the salsa is too thick, add a little more water. Taste to see if you need more salt. Once you’re satisfied, serve and enjoy with a nice glass of lightly chilled Ruby Ruby or Hallberg Blanc!
